Plant Based Eggs?... What's it made out?

Plant based food have been taking the food industry by poker hand. First was the burger with Beyond meat and Impossible meat. 

It is not a surprise that nowadays we have access for our table an Egg and Butter Plant Based but is interesting to know that these foods are plant based. For Plant based egg Mung bean is the main ingredient, though onion is also included for flavoring and carrots and turmeric are added to give Just's Egg its egg-like yellow glow. It is important to say that this products are not from chicken, therefore more ingredients had been added such as tetrasodium pyrophosphate, transglutaminase, and nisin. The main ingredient however and what really makes the product looks, feel and taste as a traditional egg is the aforementioned mung bean, a a bean commonly found throgout Asia and often used to make desserts. Mung. bean provides just with a characteristically eggy texture. 

Once the Egg plant based ingredients are being processed to obtain the most similar egg functionality the master piece is the color. However when we speak about adding color to respect all the terms of a Natural Plant Based product it must be a 100% Artificial Colors free product. Therefore, the most similar color to give a Yellow 5 or Tartrazine color is the Turmeric which is heat stable, acid stable and works fair with the light systems.
